Don’t know about you, but we struggle finding time to prepare something healthy – especially when we’re at work all day. Luckily there are lots of quick and easy recipes out there when we need them!
Here’s a simple and delicious salad that’s easy to prepare for lunch and beautiful to display at a dinner party.
Strawberry and goat cheese salad
Serves 4-6 people
2 cups of strawberries
2 cups of berries
2 cups of pomegranate seeds
3 cups of spinach leaves
1 cup of goat cheese
½ cup of feta cheese
1 cup of pine nuts
Cut the strawberries into slices
Spread the spinach into the bowl and add the strawberries
Cut both cheeses into small pieces and add them to the salad
Add the pine nuts and pomegranate seeds
2 table spoons of olive oil
1 table spoon of mustard
½ tea spoon of salt
½ tea spoon of pepper
1 tea spoon of honey
1 tea spoon of ginger powder
1 tea spoon of soya sauce
1 cup of strawberry juice
½ cup of balsamic vinegar
Mix it all up and set it aside to be served!
