No bake double chocolate biscuit cake

Happy Saturday! We hope you’re all enjoying your weekend as we most certainly are. This is a new recipe of ours, and because we had received lots of compliments on this delicious double chocolate biscuit cake, we thought we’d share it and spread the chocolatey love. The good thing is that this is a no-bake cake which means you don’t need to use the oven at all. It’s also fun to make because you can get creative with the ingredients!

Ingredients:

For the cake:

  • 800g or 32 Leibniz butter biscuits
  • 2/3 cup of butter
  • 1/2 cup of cocoa powder
  • 1 cup of water
  • 1 cup of sugar
  • 1 tsp of vanilla
  • 1 cup of cotton candy
  • 1 cup of walnuts (optional)

For the glaze:

  • 120g or 6 bars of Galaxy chocolate
  • ½ cup of whipping cream

Directions:

For the cake:

  • In a bowl, break the biscuits into the bowl and add the cotton candy and walnuts (optional)
  • In a sauce pan, whisk the sugar, cocoa powder and water. Mix them well as they’re cooking and add in the butter as well. Set the pan aside for 15 min or until it completely cools down, then add the vanilla
  • Pour the mixture over the biscuits, mix them all together and then pour everything into a removable cake pan

For the glaze:

  • Cut the chocolate into small pieces and put them all in a new bowl
  • Melt the whipping cream in the microwave for 2 minutes then pour it over the chocolate
  • Mix it well and pour the mixture over the biscuits
  • Decorate the top layer with cotton candy or fruits (blueberries)
  • Put the cake in the fridge then finally serve it on a beautiful dessert plate!
