Not all cakes are sweet! Savory cakes are so delicious and perfect for breakfast or brunch for a change. Next time you’re hosting people during the day or want to spoil yourself on a Saturday morning, try out this super easy and delicious spinach and feta savory cake.
Ingredients
- 3 eggs
- 1 cup milk
- 2 cups flour
- 1 Tbsp of baking powder
- 1 cup gruyère cheese minced (optional)
- 2 cups Feta cheese
- 2/3 cup vegetable oil
- Fresh basil leaves
- 3 large handfuls of fresh raw spinach (or frozen chopped spinach)
- Salt (upon preference)
- Pepper (upon preference)
Directions
- Cover a loaf pan with parchment paper
- Wash and chop the spinach (or thaw the frozen spinach)
- In a bowl lightly beat the eggs and add milk, oil, salt and pepper
- Add flour and baking powder to the mixture
- Add the feta cheese, scrambling it with your fingers, the gruyère cheese, the chopped spinach and basil leaves
- Pour the mixture into the pan and let it rest for 20 minutes
- Preheat the oven to 180°C and bake the cake for 45-50 minutes or until well done
